ice cream sandwich

ok so i have to say that i made the best ice cream sandwich’s last night. i started watching martha stewart recently and this was a recipe from her show. well it is only the cookie recipe but these are the best peanut butter cookies i have ever had. this recipe is on her website courtesy of How Sweet It Is cake studio in NYC. you can also get their recipe for chocolate ice cream but i am not that ambitious and just bought it at the store. here is the cookie recipe:

1 cup butter, room temperature
1 cup smooth peanut butter
1 cup sugur, plus more for sprinkling
1 cup packed dark brown sugar (i used light brown and it came out great)
2 large eggs
2 1/2 cups all-pourpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
chocolate ice cream (click here for ice cream recipe if you want to make it)

1. cream together butter and peanut butter until smooth. add both sugars and continue to mix until smooth.

2. add eggs, one at a time, mixing well after each addition. In a large bowl, wisk together flour, baking powder, baking soda and salt. add flour mixture in two batches, mixing well after each addition. continue mixing until a dough forms. for dough into a ball and wrap with plastic wrap; refridgerate until firm, at least 4 hours.

3. preheat oven 350 degrees.

4. once firm, roll dough into 1 1/2 inch balls. Place on baking sheet about 2 inches apart. Press down on each dough ball using the tines of a fork, once vertically and once horizontally making a crisscross pattern on the cookie. sprinkle with sugar and transfer to oven. Bake 14 to 16 minutes, rotating baking sheet once during baking. let cool completely.

5. Place 1 scoop of ice cream on the bottom side of cookie and top with another cookie to make a sandwich. serve immediately or wrap individually using plastic wrap. will keep frozen for up to 1 month.

10 reasons i love one year olds

1. they are always happy to see you.
2. their is nothing like a baby cuddle (even if they are wiping their noses on you.)
3. an ice cream scoop is their favorite toy.
4. they don’t ask why or when or how or where.
5. when i say “iiii am goooing to get you!” they run towards you not away from you.

6 – 10. smiles, laughter, toothless gums, cribs & unconditional love.

renton river days

every year IKEA puts on a week celebration at the park called renton river days. wednesday was the kids day and we went to check it out. i didn’t have a camera so i couldn’t take pictures of their face painting until we got home. even though they are fading away, they were still so excited about them. they went in a bounce house shaped like a merry-go-round, got their faces painted, went in a fire truck and through a firemans obstacle course and just walked around. it was really busy there but we had fun. thank you IKEA!
jackson was supposed to be a lion.
lily wanted an octopus.
asher just was there for the ride.

food is good, free food is even better

there is a mall right by our house that is having a grand re-opening this weekend. after the opening, it will be the largest mall in the pacific northwest. well…last weekend, we decided to get out of the house and thought we would venture over there and have a look around. well most of the new areas were blocked off but the mall people let you walk through some of it and it was interesting but not too exciting so we decided to go home. well on our way out, we walked by some of the new restaurants that are going to be opening and one of them called “joey’s” invited us in for a trial run. now this place is very nice and expensive and isn’t really a kid friendly establishment(they didn’t even have highchairs) but they invited us anyways. well they just brought stuff out and told us that we could also have anything else on the menu if it looked good. as you can see by looking at the pictures we had an amazing amount of food. what is not pictured are desserts that they sent home with us, freshly baked chocolate mousse and some apple pie pastry with a carmel ice cream. i do have to say that i have never a anything that tasted better than that chocolate mousse. our children were tired and cranky so we didn’t get to stay and enjoy too long but at least we got to take it all home.

i look crazy in this picture but lily looked cute.

they brought two of these bowls of fries to keep the kids happy until the food came.

lily asked me today for a clear piece of paper so she could write some words. she asked me to tell her words to write but i said she needs to think up her own words. these are the words that she came up with: water, cat, fox, box, sock, love, tiara, dog, mom, dad, you, cup. can you make any of them out? when she runs out of room she sometimes puts the letter in a random spot just to squeeze it in. after she was done, she came and sat next to me on the couch and said she wanted to read her talk to me. she had to give a talk on sunday and steven wrote it for her so i guess she has now decided to write her own. well then she begins:
God made the water
and the cat
and the fox
and the sock
and the box
and the tiara
and the love
and the dog
and the cup
and mom
and dad
and you.

good-bye harris family

July 14th, 2008
well our friends the harris family are moving to back to utah. we will definitely miss having them around. there are too many good times to count of us all hanging out, playing games and eating lots of good food (thank you dena for that.) i know that we will see you at some point so that lessens the pain a bit. well we had a farewell dinner at the danielsons house and here are some of the pictures.
maddie and jackson got in to a bit of trouble in the backyard dirt. they were covered from head to toe. we actually had to hose both of them off. maddie dealt with it be jackson was not happy.

late and tired but still giving eachother good-bye loves.

we had a really good time lastnight. whenever we all get together there is nothing but nonstop laughter, interesting conversation and fun. we will miss the get togethers but will hopefully there will be more. good-bye we will miss you.

coulon beach

we went to a nearby beach today to enjoy the water. don’t get me wrong it is no california beach but…we had a lot of fun. surprisingly asher couldn’t get enough of the water. he was practically jumping out of steven’s hands trying to swim around. lily has never wanted anything to do with the water but she couldn’t wait to get in and she had a blast. jackson on the other hand said he just wanted to watch. he stood up on the shore most of the time but then towards the end he decided he liked the splashing and got himself and anyone around him drenched and covered in sand.

weeds

i looked out into my backyard today and realized that it has completely been taken over by weeds. fortunately for us they are the pretty dandelion weeds. lily loves to go out and pick them so i almost feel guilty when i mow them away. i thought i would take advantage of them and try to take some pictures. i intended on taking pics of all the kids but jackson couldn’t break himself away from barney(the kid hates taking pictures.) so here are the ones that i managed to take of ash and lily.

no kids but i thought this shot was cool. i love how just the two flowers stand out and the rest are blurry.

i know her eyes are closed in this picture but i still thought it was cute.
